How is Cooking Related To Physics, Chemistry & Biology?

Few realize though that cooking is a fairly complex process where science, such as chemistry, biology, and physics play a major role in understanding why and how changes in the raw ingredients happen.

It has been defined as a living and non-living organism like animals (aquatic and nonaquatic), plants, fruits, fungi, etc. The food which discovered for consumption, which has nutritional value, provides energy & maintains life.

How Is Physics & Chemistry Relate To Food Science

Temperature and Timing are the main and major factors in food science. 

Temperature and timing are equally important when it comes to cooking. It gives a change in taste, texture, shape, and aroma.

For eg: If you take 250 gm of raw chicken breast and boiled it at three different temperatures and with the same timing will give you different effects on it.

Most of the recipes show the ingredient and way of cooking which has an impact, but who knows the taste? little do they realize that in practice sometimes even one degree Celsius has a profound effect which changes the entire food.

For example, chicken breast can fundamentally change its texture if it is cooked at 120C instead of 180C (shown above). The same applies to timing too.

The scientific evaluation of cooking methods, such as oven, steam oven, pan-frying, and comfit cooking has tremendous effects on cooking.

Each one has its effects while cooking. One can cook multiple styles and named the dish as far as timing and temperature is a concern.

I can give you the best example of boiled eggs. Take a pan and water in it; heat the pan in 100C temperature. Put 10 eggs into the water and remove one by one egg every minute.

This way the first egg will be cooked for 1 mts and the tenth egg will be cooked for 10mts. If all the 10 eggs have different timing and temperature then all of them will have different impacts on taste, texture, tender nous, and aroma.

The physical appearance also has an impact on –C temperatures with water for ice, meat, etc.

    • The nutritional value of meat changes in 300C temperature. But if you cook chicken in tandoor will give you the excellent result (subject to the timing) and same with boiled chicken.
